Ingredients needed

For the base:

  • 250 g pitted dates or date paste
  • 4 tbsp boiling water
  • 40 g ground oats
  • 75 g coconut flour

For the coconut filling:

  • 250 g coconut cream
  • 140 g desiccated coconut
  • 60 g coconut flour
  • 50 g maple syrup

These Vegan Bounty Cups are free from refined sugar and made entirely with plant-based ingredients. They’re sweetened naturally with dates, a touch of maple syrup, and topped with our Bett'r choco drops, no added sugar.

This recipe is quick to prepare and the result is irresistible: creamy coconut filling, a soft cookie-like base, and a rich chocolate topping. 

1. Make the base:

Blend the dates with the hot water until you get a smooth paste. Knead in the ground oats and coconut flour until a soft dough forms. Press the mixture into silicone muffin molds (or paper liners if you don’t have silicone).

2. Coconut filling:

Mix all filling ingredients in a bowl until creamy. Spread evenly over the oat-date base. Smooth the tops with a spoon or spatula. Freeze for at least 1 hour.

3. Add the topping:

Melt the chocolate gently, then spread over the coconut layer. Sprinkle with coconut chips for decoration.

Store your Bounty Cups in the fridge for a soft texture or keep them in the freezer for a firmer, ice cream-like treat. Either way, they're deliciously satisfying!
